Kale Soup

Ingredients x 4
2 bunches of kale, sliced
1 small onion, peeled and diced
1 carrot, peeled and diced
1 celery stick, diced
2 peeled tomatoes
salt and freshly ground black pepper
1.5 litres of organic vegetable stock
3 tbsp extra vergin olive oil

Heat the oil in a pan and sauté the onion, the carrot and celery for 2-3 minutes. Stir in the kale and heat for a further 2 minutes. Add the tomatoes and pour in the stock. Bring to the boil, then reduce the heat, season with salt and pepper and cook for about 60 minutes. When it's ready serve in a bowl with a slice of toasted bread and add some freshly ground pepper and a some extra vergin olive oil!
