Fried Rice with Prawns




Ingredients x 4
300 gr Basmati rice
5 tbsp extra vergin olive oil
2 shallots
3 eggs
50 gr of diced ham
125 gr frozen pees
70 gr of prawns
2tbsp of soy sauce
salt



Chop the shallots and mix half of them with the eggs, add a little salt and whisk gently. Heat 2 tbsp of olive oil in the wok, add the eggs and beat until they start to thicken. Place the eggs in a dish and cut into small pieces with a fork. Heat 2 tbso of olive oil in the wok, add the diced ham, the peas, the prawns, some salt and stir fry for 1 minute. Take it off into a dish. Heat some olive oil in the wok and add the shallots and the basmati rice already almost cooked. Add the soy sauce and mix it well and then add the remaining ingredients. If you like it spicy, you can add some freshly cut red hot chili peppers!
