Potato and Codfish Croquettes



Ingredients x 4
600 gr codfish (even frozen)
750 gr potatoes, peeled
3 eggs
2 shallots
1 tbsp curry powder
1/2 tbsp cumin powder
salt and pepper
fresh parsley
3 tbsp extra vergin olive oil
oil to fry
50 gr bread crumbs





Peel and cut the potatoes into small pieces and place them in a pan and cover with cold water. Boil the potatoes in salted water for 10-15 minutes, or until tender. Drain well and mash until smooth. Cut the codfish into tiny pieces (if not fresh, make sure it's defrosted). Heat the olive oil in a frying pan and add the thinly cut shallots. Add the curry and the cumin powder and let it mix for 1 minute. Add the fish and coock for about 10 minutes. When it's ready, smash the fish with a fork. Pour the mashed potatoes in a bowl, add 2 yolks, the codfish, some thinly cut parsley, salt and pepper and mix with your hands. Shape into small croquettes, pour them in the egg and then in the bread crumbs. Fry the croquettes in a large frying pan with hot and abundant frying oil and cook for about 2-3 minutes on both sides until crisp and golden. Drain on paper towels.
